Ingredients

3
egg whites
1/4 tsp
cream of tartar
1 c
sugar
1 tsp
vanilla

soda crackers, crushed
1 c
pecans, chopped
1/2 pt
whipping cream
2 Tbsp
pineapple preserves
1/4 c
coconut for garnish

How to Make Cracker Pie

Step-by-Step

  • 1Line a 9 inch pie plate with foil and grease with butter. Beat egg whites until foamy. Add cream of tartar and beat until stiff. Gradually blend in sugar and vanilla.
  • 2Crush the soda crackers and add to the chopped pecans. Gently fold into egg white mixture. Pour mixture into the foil-lined pie plate. Bake for 30 minutes in a 325 degree oven. Let cool completely.
  • 3Beat whipping cream gradually adding pineapple preserves until set. Spread on cool pie. Sprinkle top with coconut. Refrigerate.
