Ingredients For cracker pie

  • 3
    egg whites
  • 1/4 tsp
    cream of tartar
  • 1 c
  • 1 tsp
  • 16
    soda crackers, crushed
  • 1 c
    pecans, chopped
  • 1/2 pt
    whipping cream
  • 2 Tbsp
    pineapple preserves
  • 1/4 c
    coconut for garnish

How To Make cracker pie

  • 1
    Line a 9 inch pie plate with foil and grease with butter. Beat egg whites until foamy. Add cream of tartar and beat until stiff. Gradually blend in sugar and vanilla.

    Crush the soda crackers and add to the chopped pecans. Gently fold into egg white mixture. Pour mixture into the foil-lined pie plate. Bake for 30 minutes in a 325 degree oven. Let cool completely.

    Beat whipping cream gradually adding pineapple preserves until set. Spread on cool pie. Sprinkle top with coconut. Refrigerate.
