Ingredients

  • 1 c
    butter, softened
  • 1 1/2 c
    granulated sugar
  • 3 large
    eggs
  • 1 1/2 c
    light corn syrup i use karo
  • 1/2 c
    milk
  • 1 tsp
    vanilla extract
  • 1/2 c
    cornmeal
  • 3 Tbsp
    all purpose flour
  • 2
    9-inch pie shells-unbaked
  • ·
    whipped cream, for garnish

How to Make Cornmeal Pie

Step-by-Step

  1. In a large bowl, cream butter and sugar. Beat in eggs, one at a time. Add corn syrup, milk and vanilla; mix well. Fold in cornmeal and flour. Pour into pie shells.
  2. Bake at 350^ for 25 minutes. Reduce heat to 300^. Bake 20-25 minutes longer or until silver knife inserted in the center comes out clean. Cool on a wire rack. Garnish with whipped cream if desired, Sprinkle with cinnamon sugar mixture if desired. Refrigerate any leftovers. Makes 2 pies.
