coconut pie
My husband's very favorite pie is coconut pie. I found this recipe in the old Peterman cookbook that I purchased at the festival and decided to keep this recipe because it was good, easy to make and my husband especially liked it.

Ingredients
- 3 - egg yolks
- 1 3/4 cups milk
- 3/4 cup sugar
- 1/4 teaspoon salt
- 3 tablespoons flour
- 3/4 cup coconut
How To Make coconut pie

Step 1Heat milk to boiling point. Add yolks, sugar, salt and coconut together. Add a little of the hot milk to the egg mixture, stir well, then pour into boiling milk stirring constantly. Cook until thick. Place in baked pie shell. Beat egg whites with 3 tablespoons sugar until stiff and pile on top of pie. Bake in oven 350 degrees until light brown. I also sprinkled a little coconut on top before baking it.
