Ingredients
- 2 - 9 - inch, unbaked pie crust or can make 1 deep dish pie.
- 5 - eggs
- 1/4 teaspoon salt
- 12 - 14 ounces shredded coconut
- 3/4 cup buttermilk
- 1/2 cup melted, butter
- 2 cups sugar
- 1 teaspoon vanilla extract
- - cinnamon for the top ( optional )

Step 1Preheat oven to 350 degree F. Have your crusts ready.

Step 2In a large bowl, beat eggs & sugar until smooth.

Step 3Mix in buttermilk & melted butter. Stir in coconut & vanilla.

Step 4Divide the batter equally between both pie crusts.

Step 5Bake for 15 minutes, then cover the crust with strips of aluminum foil to prevent the crust burning. Bake for an additional 30-35 minutes.
