I HAVE BEEN MAKING THIS PIE FOR YEARS....ITS A GOODIE N VERY EASY TO PREPARE ....ALL COOKED IN SAUCEPAN :)

Ingredients
- 1 1/2 cups sweetend flaked coconut
- 1 1/2 cups half n half
- 1 1/2 cups coconut milk (one can)
- 2 - eggs, beaten
- 3/4 cup sugar
- 1/4 cup flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 teaspoons vanilla
- 1 - pie shell, baked
- 11/2 cups cool whip

Step 1LIGHTLY BAKE COCONUT ON BAKING SHEET FOR ABOUT 5 MINUTES ON 375 STIRRING OCCASIONALLY TILL GOLDEN... THEN SET ASIDE.

Step 2IN A MEDIUM SAUCEPAN COMBINE HALF N HALF, COCONUT MILK, BEATEN EGGS, SUGAR, FLOUR, CORNSTARCH, SALT N MIX WELL. BRING TO A BOIL OVER LOW HEAT... B PATIENT N WAIT FOR BOIL... STIRRING CONSTANTLY. REMOVE PAN FROM HEAT N STIR IN 1 CUP OF TOASTED COCONUT N VANILLA.

Step 3POUR FILLING INTO BAKED PIE SHELL N CHILL FOR ATLEAST 4 HOURS OR UNTIL FIRM. (DO NOT COVER). THEN TOP WITH COOL WHIP N SPRINKLE WITH REMAINN TOASTED COCONUT. (MY PIE WAS EATEN SO FAST THAT I DIDNT HAVE TIME TO TAKE PIX WITH TOPPING)!....ENJOY :) REVISED PICTURE WITH TOPPING....NOW TOTALLY ENJOY :)
