cindy's flaky pie crust

I love making pies. It has taken me a while to perfect my crust but I have found this to be the best crust so far!Using parchment paper to roll out the dough illiminates the need to use flour, making the crust more flaky & tender. Also, make sure the water is ice water. This makes enough for a double crust pie or 2 single crust pies.

Ingredients
- 2 1/4 cups flour
- 1/8 teaspoon salt
- 2/3 cup shortening
- 6-7 tablespoons ice water
How To Make cindy's flaky pie crust

Step 1Mix flour & salt together.

Step 2Using a pastry blender, mix shortening with flour until the size of small peas.

Step 3Add water, 1-2 tablespoons at a time, lightly tossing with a fork after each addition. Do not mix. Lightly toss only. Mixing too much will make a tough crust.

Step 4Press together to form a ball. Divide in two. Roll each half out to desired size bewtween two pieces of parchment paper. No need to flour the parchment.
