Chess pie

ginger skaggs

This is one of my great-grandmothers recipes. It is one of my favorites and my childrens. The original recipe had no measurements other than a handful of sugar or walnut sized butter or a scant cup of milk. It's easy to make and rich.

1 1/2 cups sugar
1/2 cup butter
1 tablespoon cornmeal
2 tablespoons flour
2 whole eggs
1/2 lemon or equivalent
1/2 cup whole milk
1 unbaked pie shell

1Cream the first 4 ingredients together.
2Add remaining ingredients except for pie crust and mix well.
3Prepare pie crust by poking holes in it to prevent crust from bubbling.
4Add pie filling and bake at 350 degree oven for 30-35 minutes or until center doesn't jiggle. Cool before cutting.
