catherine's pecan pie
Some pecan pies are just too sweet, some are a bit bland and some are just waxy tasting. This pie is smooth tasting and rich, a pecan pie that is just perfect! I found this recipe in an old blue ribbon winner cookbook so I hope it is a blue ribbon winner in your house, too! It is in mine. I served it for CHRISTmas Eve dinner and several people remarked how good it is! Yum!

Ingredients
- 1 tablespoon flour, all purpose
- 3/4 cup sugar
- 3/4 cup light corn syrup
- 1/4 cup half and half, fat free (can use whole milk)
- 2 - eggs, beaten slightly
- 2 tablespoons butter, melted (kerrygold is best)
- 1 1/2 cups pecans, chopped
- 1 - unbaked pie shell

Step 1Mix together flour and sugar; stir in remaining ingredients and blend thoroughly. Pour into unbaked pie crust. Bake in 350 degree oven for about 1 hour or until pie is set and firm. Top with whipped cream or cool whip.
