Caroline's Pie Pastry

How to Make Caroline's Pie Pastry
- Cut butter, shortening, and salt into flour using a fork, until mixture resembles coarse crumbs. Once you add water work very quickly so pastry will be tender. Too much handling makes a tough crust.
Add water and quickly mix just until dough forms a ball. Knead a few times.
- Place pastry in refrigerator for at least 1 hour. This is an important step to help keep the pastry tender. Do not skip this step.
- After 1 hour or more roll out pie crust or pastry as desired. Again remember to work dough as little as possible.
