I found this recipe in my Mom's collection. When I tried it I discovered it was her stand-by. She hadused it so often she had this one memorized. This crust is reliably tender and good. Even I can make it, and I have a history of buying premade pie crusts.

Ingredients

  • 6 tablespoons butter, unsalted, cold
  • 2 tablespoons crisco or shortening
  • 1 pinch salt
  • 1 1/2 cups all purpose flour
  • 2 tablespoons ice water

How To Make caroline's pie pastry

  • Step 1
    Cut butter, shortening, and salt into flour using a fork, until mixture resembles coarse crumbs. Once you add water work very quickly so pastry will be tender. Too much handling makes a tough crust. Add water and quickly mix just until dough forms a ball. Knead a few times.
  • Step 2
    Place pastry in refrigerator for at least 1 hour. This is an important step to help keep the pastry tender. Do not skip this step.
  • Step 3
    After 1 hour or more roll out pie crust or pastry as desired. Again remember to work dough as little as possible.
