I got this recipe out of a church cookbook.

  • 1 (12 oz.) pkg
    semi-sweet chocolate chips, melted
  • 2 tsp
    instant coffee
  • 1 c
    walnuts, broken
  • 1/4 c
  • 1/2 c
    waknuts ( for decoration)
  • 1 ( 9 inch
    pie shell, unbaked
  • 3/4 c
    brown sugar
  • 1 tsp
    rum extract

How to Make Caribbean Fudge Pie


  1. Cream butter with sugar; beat in eggs one at a time.
  2. Add melted chocolate chips, instant coffee, brown sugar and rum extract.
  3. Stir in flour and walnuts; turn into pie shell. Top with the remaining 1/2 cup walnuts and bake at 375 degrees for 25 minutes.
