My Mama makes the ultimate pecan pie, I like to make this with caramel because I simply love caramel.

Ingredients

  • 36
    caramels
  • 1/4 c
    water
  • 1/4 c
    butter - cubed
  • 3 large
    eggs
  • 3/4 c
    sugar
  • 1 tsp
    vanilla extract
  • 1/8 tsp
    salt
  • 1 1/3 c
    pecans, toasted chopped
  • 1
    9" unbaked deep dish pastry shell
  • ·
    pecan halves - optional

How to Make Caramel Pecan Pie

Step-by-Step

  1. In a small saucepan, combine the caramels, water and butter. Cook and stir over low heat until caramels are melted. Remove from heat and set aside.
  2. In a small mixing bowl, beat together eggs, sugar, vanilla and salt until smooth. Stir in pecans and caramel mixture.
  3. Pour into pastry shell - if desired, arrange pecan halves on top.
  4. Bake at 350 degrees for 35 - 40 minutes. Let cool and set before slicing.
