My Mama makes the ultimate pecan pie, I like to make this with caramel because I simply love caramel.

Ingredients
- 36 - caramels
- 1/4 cup water
- 1/4 cup butter - cubed
- 3 large eggs
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 1/3 cups pecans, toasted chopped
- 1 - 9" unbaked deep dish pastry shell
- - pecan halves - optional
How To Make caramel pecan pie

Step 1In a small saucepan, combine the caramels, water and butter. Cook and stir over low heat until caramels are melted. Remove from heat and set aside.

Step 2In a small mixing bowl, beat together eggs, sugar, vanilla and salt until smooth. Stir in pecans and caramel mixture.

Step 3Pour into pastry shell - if desired, arrange pecan halves on top.

Step 4Bake at 350 degrees for 35 - 40 minutes. Let cool and set before slicing.
