Caramel Pecan Apple Pie

I leave the peels on the apples and it works wonderfully. I also am terrible toasting pecans in the oven, I always forget and burn at least one batch. I melt a little butter in a cast iron skillet and toast them on the stove. Great taste and I keep my eye on them.

Ingredients

  • 7 c
    sliced apples
  • 1 tsp
    fresh lemon juice
  • 1 tsp
    vanilla
  • 1 c
    chopped, toasted pecans
  • 1/3 c
    brown sugar, firmly packed
  • 3 Tbsp
    sugar
  • 4 1/2 tsp
    cinnamon
  • 1 Tbsp
    cornstarch
  • 1/4 c
    caramel topping or cajeta
  • 1
    unbaked pie shell
