blueberry pie
concocted from my favorite cookbook, The Settlement Cookbook. Have had a request for 2 pies this weekend, will put up a photo if they come out presentable :)

Ingredients
- 1 quart fresh blueberries
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 2 tablespoons lemon juice
- 3 tablespoons cream
- 1 - egg yolk
- - streusel-optional
- - confectioners' sugar-optional
How To Make blueberry pie

Step 1Wash & pick over blueberries. Line pie plate with a thin layer of Cookie Dough for Pies(recipe posted separately), sprinkle with bread crumbs. Add the berries, sprinkle with sugar, cinnamon & lemon juice, then over all the egg yolk, beaten with cream.

Step 2Top with streusel if desired. Bake at 375 degrees for about 35 min, until crust is lightly browned. Top with confectioner's sugar if desired.
