blueberry cream pie

I love blueberries! Though I eat them more raw than adding sugars to my diet, it tastes great and my family loved this one! This was fun!

Ingredients

  • FILLING:
  • 2 cups unthawed or fresh blueberries
  • 8 ounces cream cheese, low-fat
  • 16 ounces whip cream
  • 2 teaspoons himalayan salt
  • 1/2 cup powder sugar
  • CRUST:
  • 2 packages crushed graham crackers (reg or choc.)
  • 1/4 cup coconut oil

How To Make blueberry cream pie

  • Step 1
    Separate 1 c. blueberries to add later and 1/2 of whip cream ( 8 oz.)
  • Step 2
    In med bowl combine filling ingredients with only 1 cup of blueberries.
  • Step 3
    After mixing add the cup of whole blueberries stirring slightly to not mash them.
  • Step 4
    Combine Crust ingredients in a bowl, then mash them into a greased pie pan.
  • Step 5
    Bake crust at 350 degrees till slightly toasted. Cool.
  • Step 6
    Add pie filling to crust. Spoon in whip cream to pir filling and swirl around and add some on top.
  • Step 7
    Freeze for 30 min. then enjoy!
