my step grand mother used to make apple rhubarb pie alot. and i loved it. her name was vinie camp. she let me be in the kitchen when she made it . i myself have heard u can cook it down and thicken it up b 4 u pour it into a pie crust so i will have 2 versions of this on

Ingredients For apple rhubarb pie version 1

  • cut up 6-8 granny smith apples and sprinkle well with lemon juice so it don't turn dark.
  • 1 1/2 large bunches [from store] of rhubarb
  • 3 1/2 cups sugar, and 1 1/2 tablesps corstarch
  • 2 teasp cinnamon 1 teasp nutmeg
  • 2 ready made deep dish pie crust and 1 box pillsberry pie dough [ready made for tops of pies]
  • pre heat oven to 350. foil for edges of pie crust
  • may add 1 cup of raisins if u wish

How To Make apple rhubarb pie version 1

    in large pot on top of stove place sliced apples and cut up rhubarb into 1 inch cubed pieces. add water to pot about an inch - 2 inches above fruit. add sugar and spices and stir well for about 20 -25 mins til fruit is tender not soggie

    add corn starch to thicken when its thickened u may add the raisins at this time[so they don't get mushie] test taste to see if its sweet enough for ur likeing if not add a little more sugar

    now that they have thickened up pour 1/2 into each deep dish pie crust after u have sprinkled pie crust litely with flour. then place pie crust tops on and flute with fingers or fork either way is fine

    then take and make a few slits with fork or u can[b4 u put top crust on] take a tiny heart shaped cookie cutter or do it free hand and cut out a few designs on top pie crust. then place[not large cut outs 1/2 inch about] on top pie don't throw out the designs that r left

    place a teasp of milk and brush on top pie crust and sprinkle with sugar place foil around edges of pie crust so it won't burn place on cookie sheet and place in oven for about 45 mins then take out and take foil off pie crust edges and put the designs from where u cut out of top pie crust edges and place back in oven to golden brown
