apple pie cheesecake

I found this recipe in Woman's Day Magazine about 4 years ago. I made it for Thanksgiving and everyone LOVED it! So now I make this every year for Thanksgiving and Christmas. It is AMAZING!!

Ingredients

  • 15 - pecan shortbread cookies
  • 4 tablespoons butter, melted
  • 3 packages cream cheesesoftened
  • 1/4 cup light brown sugar
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 - eggs
  • 1 can 21oz apple pie filling (comstock)
  • 3 cups whip cream or topping
  • 2 tablespoons caramel sundae topping

How To Make apple pie cheesecake

  • Step 1
    Preheat Oven to 350 F. Wrap outside of 9" springfoam pan with foil. Place Cookies in food processor; process to fine crumbs. Gradually add butter, pulsing until combined. Press mixture into the bottom and up one quater of side.
  • Step 2
    On medium speed, beat cream cheese, sugars, cinnamon and vanilla until creamy. Beat in eggs, one at a time.
  • Step 3
    Pour 3 cups of Cheesecake Batter into crust Top with Apple Pie Filling Then pour remaining Cheesecake Batter on top.
  • Step 4
    Bake 45 minutes or until set Turn oven off; Let Cheesecake stand in oven with door closed for 1 hour. Remove from from oven; cool completely on rack. Remove Foil and refrigerate cheesecake until ready to serve.
  • Step 5
    Remove side of Pan. Top Cheesecake with Whip Cream Drizzle with Caramel topping.
