MY version of French Apple Pie

Ingredients For apple pie

1 pkg10 inch double pie crusts

1/3 cwhite sugar

3 Tbspall purpose flour

1 cmilk

3egg yolks
-
1 Tbspbutter
-
1/2 tspvanilla extract

1 Tbsplemon juice and zest each

2 Tbspbutter, cold

2 Tbspsugar

3/4 capricot preserves

1whole egg and tsp water
- FRENCH APPLE PIE
How To Make apple pie

1Purchase frozen pie crust 10 inch size or use you own recipe for pie crust..roll out larger than 10 inches so ypu have an overhang of crust..place into pie plate.

2FILLING..in small saucepan combine 1/3 cup sugar and flour mix well stir in milk bring to boil lower heat and keep mixing until slightly thickened --1 to 3 minutes..beat egg yolks slightly beat a little hot mix into yolks stir to avoid lumps ..pour back into pan and add butter and vanilla..turn into bowl to cool.

3Core and pare apples sprinkle with lemon juice in fry pan heat the butter and sugar add nutmeg {1/4 tsp} add the apples stir a little and cook until almost tender about 5 minutes,,remove from heat using same pan melt apricot preserves.

4Pre heat oven to 400 degrees turn apples into pie shell and spread out mounding slightly in center..spread the apricot preserves over apples.

5Withe the other crust cut into 12 strips 1/2 inch wide..slightly moisten rim of pastry shell with cold water..arrange six strips across the filling press to rim of pie shell with remaining 6 strips place at right angles on other strips..crimp edges..with fork beat egg and water and brush the lattice ..instead of using another egg to brush the lattice I snitch a little from egg for the filling as you only need a wee bit.
