I WORKED WITH A SPANISH GIRL, AT A TITLE LOAN OFFICE, SHE SHARED THIS RECIPE WITH ME, OVER 5 YEARS AGO, NOW.. IT CAME FROM HER FAMILY'S RECIPES FROM MEXICO.. IT REMINDS ME OF CHEESECAKE IN A PIE SHELL.. WHAT I LIKE BEST ABOUT IT, IS EVEN WHILE IT IS STILL VERY WARM, YOU CAN SLICE IT TO SERVE, AND THE PIECES WILL NOT RUN...ENJOY....

Ingredients

  • 2 - graham cracker pie crust
  • 1 large 8oz. package of cream cheese
  • 2 large eggs
  • 1 tablespoon lemon juice concentrate
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1 package queso fresco cheese( in dairy with mexican food items)

  • Step 1
    YOU WILL NEED A BLENDER FOR THIS RECIPE, A LARGE STANDARD SIZE ONE.. THE BATTER WILL COMPLETELY FILL IT TO THE TOP, WITH LID ON...
  • Step 2
    PLACE CHEESES IN THE BOTTOM OF BLENDER, ADD EGGS, AND OTHER INGREDIENTS.
  • Step 3
    MIX WELL, UNTIL VERY SMOOTH...THE BATTER WILL SEEM THIN, AND RUNNY...THAT'S NORMAL..
  • Step 4
    POUR INTO THE 2 PIE SHELLS, BAKE AT 350* FOR APPOROXIMATELY 30-45 MINUTES, OR UNTIL KNIFE INSERTED IN THE CENTER, COMES OUT CLEAN..
  • Step 5
    THIS PIE GETS A LIGHT BROWN TOP ON IT..WHICH ALSO IS NORMAL..COOL..AND SERVE, OR REFRIGERATE. I LIKE TO TOP MINE WITH CHERRY PIE FILLING TO SERVE IT..ENJOY..
