Ingredients
- 3 - egg whites
- 1 cup sugar
- 2 tablespoons sugar
- 2 teaspoons vanilla
- 1 cup crisp round cracker crumbs
- 1 1/2 cups chopped pecans
- 1 cup heavy cream
- 1/3 teaspoon almond extract
How To Make angel pecan pie

Step 1Beat egg whites until foamy.

Step 2Add 1 cup sugar a little at a time, beating after each addition.

Step 3Add 1 teaspoon vanilla.

Step 4Continue beating until mixture holds soft peaks.

Step 5Spoon mixture into an 8\" pie plate to form a shell.

Step 6Pull up mixture into peaks around edge of plate with back of spoon.

Step 7Spread evenly.

Step 8Bake in a 350 degree oven for 30 minutes.

Step 9Cool thoroughly on a wire cake rack.

Step 10Mix cream, 2 tablespoons sugar, 1 teaspoon vanilla and almond flavoring.

Step 11Whip until thick and shiny. Spoon into cold pie shell.

Step 12Sprinkle remaining 1/2 cup chopped pecans round edge of cream.

Step 13Using a sharp knife, cut like a pie.

Step 14Makes 6 - 8 servings.
