A friend of mine in ICU at North Monroe Hospital brought this to a potluck. I had to have the recipe. When I take it to gatherings, there is never anything left to bring home except an empty pie plate.

Ingredients

  • 3 - egg whites
  • 1 cup sugar
  • 1 cup pecans, chopped fine
  • 1 teaspoon vanilla extract
  • 8 ounces cool whip
  • 1 cup butter crackers, about one sleeve crushed

How To Make angel pecan pie

  • Step 1
    Beat egg whites until stiff.
  • Step 2
    Add sugar and vanilla. Continue to beat for a brief period.
  • Step 3
    Fold in the butter crackers and pecans.
  • Step 4
    Bake in a greased pie plate for 30 minutes at 350 degrees. Cool.
  • Step 5
    Top with cool whip and sprinkle with chopped pecans. Chill in refrigerator until ready to serve.
