amish lemon sponge pie
As taken from an old Amish cook book sent in by Fanny Mae Bontrager. I made it today and it was 30 minutes at 375degrees. My husband is still raving about this pie. I am no good at crusta but I guess I can do fillings. This pie is like eating a cloud, light and creamy with a touch of lemon. Next time I think I will add some lemon flavoring. And my hubby wants me to add flaked coconut

Ingredients
- 1 cup sugar
- 1 tablespoon butter
- 2 tablespoons flour
- 3 large egg yolk
- 1 cup milk
- 3 large egg whites (beaten stiff)
- - juice from 1/2 lemon
How To Make amish lemon sponge pie

Step 1Mix sugar, butter anf Flour. Add Lemon juice, egg yolks and milk. Beat well.

Step 2Fold in beaten egg whites, mixing well and pour into a unbaked pie shell.

Step 3Bake in a 375 degree oven until outside half is set. Center may seem a bit soft.
