Ingredients

  • 1 Tbsp
    unflavored gelatin (1 envelope)
  • 1/2 c
    sugar
  • 1/4 tsp
    salt
  • 4
    egg yolks
  • 1/2 c
    lime juice
  • 1/4 c
    water
  • 1 tsp
    grated lime peel
  • ·
    few drops green food color
  • 4
    egg whites
  • 1/2 c
    sugar
  • 1 c
    heavy cream, whipped
  • 1
    9 inch pastry shell
  • 1/4 c
    pistachio nuts, chopped
  • ·
    lime slices for garnish
  • ·
    heavy cream, whipped, to top

How to Make Americana Key Lime Pie

Step-by-Step

  1. Thoroughly mix gelatin, 1/2 cup sugar and salt in saucepan.
  2. Beat together egg yolks, lime juice and water; stir into gelatin mixture.
  3. Cook and stir over medium heat just until mixture comes to boiling.
  4. Remove from heat; stir in grated peel.
  5. Add food coloring sparingly to tint pale green.
  6. Chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon.
  7. Beat egg whites until soft peaks form; gradually add 1/2 cup sugar, beating to stiff peaks.
  8. Fold gelatin mixture into egg whites.
  9. Fold in whipped cream.
  10. Pile into cooled baked pastry shell.
  11. Chill until firm.
  12. Spread with more whipped cream; edge with grated lime peel.
  13. Sprinkle chopped pistachio nuts in center.
  14. Garnish with thinly sliced lime placed in whipped cream mounds around edge of pie.
