unflavored gelatin (1 envelope)
1/2 c
1/4 tsp
egg yolks
1/2 c
lime juice
1/4 c
1 tsp
grated lime peel
few drops green food color
egg whites
1/2 c
1 c
heavy cream, whipped
9 inch pastry shell
1/4 c
pistachio nuts, chopped
lime slices for garnish
heavy cream, whipped, to top

How to Make Americana Key Lime Pie


  • 1Thoroughly mix gelatin, 1/2 cup sugar and salt in saucepan.
  • 2Beat together egg yolks, lime juice and water; stir into gelatin mixture.
  • 3Cook and stir over medium heat just until mixture comes to boiling.
  • 4Remove from heat; stir in grated peel.
  • 5Add food coloring sparingly to tint pale green.
  • 6Chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon.
  • 7Beat egg whites until soft peaks form; gradually add 1/2 cup sugar, beating to stiff peaks.
  • 8Fold gelatin mixture into egg whites.
  • 9Fold in whipped cream.
  • 10Pile into cooled baked pastry shell.
  • 11Chill until firm.
  • 12Spread with more whipped cream; edge with grated lime peel.
  • 13Sprinkle chopped pistachio nuts in center.
  • 14Garnish with thinly sliced lime placed in whipped cream mounds around edge of pie.
