Can't remember where I got this recipe but I've made it often for the past 25 yrs whenever I need to make a quick dessert. No need for pie crust it makes its own!
The coconut can be left out to make a simple custard pie (I sometimes sprinkle just a little sugar on top to brown).

How to Make Amazing Coconut Pie

Step-by-Step

  1. Combine milk, sugar, biscuit mix, eggs, butter and vanilla in blender. Blend on low speed for 3 minutes.
  2. Pour into greased 9 inch pie pan.
    Let stand 5 minutes then sprinkle with coconut.
  3. Bake at 350 for 40 minutes. Let pie cool down.
    Serve warm or cold.
