zucchini dessert squares

One summer, a few years ago, we had a bumper crop of zucchini. It seemed as though we could watch them grow! I stumbled on this recipe for using zuccnini in a dessert. What a find! It's from Taste of Home. If you don't tell anyone any different, your guests will know for certain that they're eating apple pie! No kidding! Serve it warm with a scoop of vanilla ice cream. Yum! Ingredients

  • 4 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups cold butter (3 sticks)
  • FILLING
  • 8 - 10 cups peeled, seeded, cubed zucchini (4 - 5 pounds)
  • 2/3 cup lemon juice
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

How To Make zucchini dessert squares

  • Step 1
    Combine flour, sugar, cinnamon, and salt in a medium-sized bowl.
  • Step 2
    Cut in butter until crumbly; set aside 3 cups of this mixture.
  • Step 3
    Pat remaining crumb mixture into the bottom of a greased 13"x9"x2" pan. Bake at 375 for 12 minutes.
  • Step 4
    While the crust is baking, make the filling. Place zucchini and lemon juice in a saucepan; bring to a boil.
  • Step 5
    Reduce heat; cover and cook gently for 6 to 8 minutes or until zucchini is crisp-tender.
  • Step 6
    Stir in sugar, cinnamon, and nutmeg. Cover and simmer for 5 minutes. The mixture will be thin.
  • Step 7
    Spoon over crust, and sprinkle with the reserved crumb mixture.
  • Step 8
    Bake at 375 for 40 to 45 minutes or until golden.
