Yes, zucchini! And before you pass this recipe up I gotta tell you- even my son's friend who hates anything resembling a veggie loves these. Delicate, flavorful brownies with bits of butterscotch, mmmm! I always double this recipe because everyone gobbles them up!

Ingredients

  • 1/3 cup margarine
  • 1 tablespoon hot water
  • 1 cup brown sugar, firmly packed
  • 1 - egg
  • 1 teaspoon vanilla
  • 1 cup all purpose flour, unsifted
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup zucchini, peeled and diced or shredded
  • 1/2 cup walnuts, chopped (optional)
  • 1/2 cup butterscotch chips

How To Make zucchini brownies

  • Step 1
    In large pan, melt margarine and water together. Add brown sugar and beat well. Let cool.
  • Step 2
    Add egg and vanilla to mixture and beat.
  • Step 3
    Combine dry ingredients, then add to sugar mixture. Stir in zucchini and nuts.
  • Step 4
    Pour into greased, floured 9x9 pan. Sprinkle with butterscotch chips.
  • Step 5
    Bake at 350 for 20-25 minutes or until toothpick comes out clean. Cool in pan.
