Yes, zucchini! And before you pass this recipe up I gotta tell you- even my son's friend who hates anything resembling a veggie loves these. Delicate, flavorful brownies with bits of butterscotch, mmmm!
I always double this recipe because everyone gobbles them up!

Ingredients

1/3 c
margarine
1 Tbsp
hot water
1 c
brown sugar, firmly packed
1
egg
1 tsp
vanilla
1 c
all purpose flour, unsifted
1 tsp
baking powder
1/8 tsp
baking soda
1/2 tsp
salt
3/4 c
zucchini, peeled and diced or shredded
1/2 c
walnuts, chopped (optional)
1/2 c
butterscotch chips

How to Make Zucchini Brownies

Step-by-Step

  • 1In large pan, melt margarine and water together. Add brown sugar and beat well. Let cool.
  • 2Add egg and vanilla to mixture and beat.
  • 3Combine dry ingredients, then add to sugar mixture. Stir in zucchini and nuts.
  • 4Pour into greased, floured 9x9 pan. Sprinkle with butterscotch chips.
  • 5Bake at 350 for 20-25 minutes or until toothpick comes out clean. Cool in pan.
