Ingredients

  • 1 teaspoon saffron threads
  • 6 1/2 cups water
  • 1/2 clove medium grain rice
  • 1 cup super-fine sugar
  • 2 tablespoons rosewater
  • 3 tablespoons pine nuts, plus more for garnish
  • 3 tablespoons pistachios, chopped, plus more for garnish
  • 1/3 cup pomegranate seeds, for garnish

How To Make zerde - sweet saffron rice

  • Step 1
    Crush the saffron threads with your fingers and soak in 2 tablespoons boiling water for 25-30 minutes.
  • Step 2
    Meanwhile, bring the water to a boil in a large saucepan, then add 1/2 cup medium grain rice. Reduce to a simmer and cook, stirring occasionally, for 20 minutes.
  • Step 3
    Stir in the superfine sugar, the rosewater, and the saffron with the soaking liquid and simmer for another 10 minutes.
  • Step 4
    Add 3 tablespoons of the toasted pine nuts and 3 tablespoons of the pistachios, and simmer for an additional 10 minutes. The mixture should be thick and soupy. If it is too thick, add a little more water.
  • Step 5
    Garnish with pomegranate seeds and/or pistachios. Serve with Greek-style yogurt on the side. This dish is sweet and aromatic.
