Ingredients
- 1 teaspoon saffron threads
- 6 1/2 cups water
- 1/2 clove medium grain rice
- 1 cup super-fine sugar
- 2 tablespoons rosewater
- 3 tablespoons pine nuts, plus more for garnish
- 3 tablespoons pistachios, chopped, plus more for garnish
- 1/3 cup pomegranate seeds, for garnish
How To Make zerde - sweet saffron rice

Step 1Crush the saffron threads with your fingers and soak in 2 tablespoons boiling water for 25-30 minutes.

Step 2Meanwhile, bring the water to a boil in a large saucepan, then add 1/2 cup medium grain rice. Reduce to a simmer and cook, stirring occasionally, for 20 minutes.

Step 3Stir in the superfine sugar, the rosewater, and the saffron with the soaking liquid and simmer for another 10 minutes.

Step 4Add 3 tablespoons of the toasted pine nuts and 3 tablespoons of the pistachios, and simmer for an additional 10 minutes. The mixture should be thick and soupy. If it is too thick, add a little more water.

Step 5Garnish with pomegranate seeds and/or pistachios. Serve with Greek-style yogurt on the side. This dish is sweet and aromatic.
