weet-bix bars with chocolate icing
We discovered Weet-Bix on a trip to NZ - my husband loved them. We can find them in the US at Trader Joe's. Apparently in AU, "slices" are what US bakers call bars. A slice tin is about 7.5 inches by 11 inches. An 8x8 inch pan could be used, but the bars will have to bake a little longer due to smaller surface area but thicker amount of batter. Also, the kind of sprinkles that are little dots (nonpareils) are called 100s and 1000s in AU. Learn something new every day!

Ingredients
- 1 cup self-rising flour
- 1 cup desiccated coconut
- 3/4 cup brown sugar
- 3 - weet-bix, crushed
- 1/2 cup butter, melted
- 8 ounces chocolate chips (chocolate melts)
- 2 tablespoons butter
- 1/4 cup nonpareils / sprinkles
How To Make weet-bix bars with chocolate icing

Step 1Preheat oven to 350ºF. Lightly grease 7" by 11" tray with parchment. (known as a slice tray in AU)

Step 2In a bowl, combine the flour, coconut, brown sugar and crushed Weet-Bix.

Step 3Stir in the melted butter and mix well.

Step 4Press mixture in prepared tin and smooth down with the back of a metal spoon. Bake for 20 minutes.

Step 5Place chocolate and butter in a glass bowl and microwave at 30 second intervals, stopping to stir for 15 seconds each time.

Step 6When all melted, pour the chocolate mixture over the Weetbix bars and sprinkle with nonpareils. Refrigerate for 15 minutes.
