This is my favorite creme brulee. It is sweet but savory also. Not too sweet like some are.

Ingredients For truffle creme brulee

  • 2 c
    heavy cream
  • 1/4 c
    sugar
  • 1/4 tsp
    salt
  • 4 lg
    egg yolks
  • 1 tsp
    vanilla bean paste
  • 2 tsp
    white truffle oil
  • 4 Tbsp
    white sugar, for sprinkling and torching

How To Make truffle creme brulee

  • 1
    Preheat oven to 325 degrees F and place 4 ramekins in a baking pan.

    Place the heavy cream in a pan and bring to a boil. Remove from heat and set aside.

    Whisk the sugar, salt, and egg yolks together until the sugar is dissolved.

    Temper the egg mixture by slowly pouring in the heavy cream, whisking continuously. Once all the cream is in, add the vanilla paste and white truffle oil
  • 5
    Pour into the ramekins. Pour water into the baking pan around the ramekins, halfway up the sides to the middle of the ramekins. Place in the oven.

    Bake about 35 minutes. Until the custard is set but jiggly.

    Remove from the oven and let sit 2 hours until they cool to room temp. Sprinkle a tablespoon of the sugar over the top of each ramekin then torch to caramelize the sugar on top.
