truffle creme brulee
This is my favorite creme brulee. It is sweet but savory also. Not too sweet like some are.

Ingredients
- 2 cups heavy cream
- 1/4 cup sugar
- 1/4 teaspoon salt
- 4 large egg yolks
- 1 teaspoon vanilla bean paste
- 2 teaspoons white truffle oil
- 4 tablespoons white sugar, for sprinkling and torching
How To Make truffle creme brulee

Step 1Preheat oven to 325 degrees F and place 4 ramekins in a baking pan.

Step 2Place the heavy cream in a pan and bring to a boil. Remove from heat and set aside.

Step 3Whisk the sugar, salt, and egg yolks together until the sugar is dissolved.

Step 4Temper the egg mixture by slowly pouring in the heavy cream, whisking continuously. Once all the cream is in, add the vanilla paste and white truffle oil

Step 5Pour into the ramekins. Pour water into the baking pan around the ramekins, halfway up the sides to the middle of the ramekins. Place in the oven.

Step 6Bake about 35 minutes. Until the custard is set but jiggly.

Step 7Remove from the oven and let sit 2 hours until they cool to room temp. Sprinkle a tablespoon of the sugar over the top of each ramekin then torch to caramelize the sugar on top.
