We adored the berry mixture in these three berry shortcakes. The combination of strawberries, blueberries, and raspberries gives this dessert a nice summery feel. This is a great shortcake recipe that's fluffy and slightly sweet once baked. Sprinkling sugar on top makes a crunchy top. The whipped cream is rich and creamy with a little touch of tang from added cream cheese. When the fresh fruit is combined with the whipped cream and shortcake, this dessert has a patriotic feel so it's great for a Memorial Day, Fourth of July, or Labor Day cookout. Put all the elements out and guests can assemble their dessert.

Ingredients
- 2 1/4 cups all-purpose baking mix
- 3/4 cup plus 3 Tbsp confectioners' sugar, divided
- 2/3 cup plus 1 Tbsp milk, divided
- 1 tablespoon sugar
- 2 cups whipping cream
- 4 ounces cream cheese; softened
- 2 teaspoons vanilla extract
- 2 cups fresh strawberries, sliced
- 2 cups fresh blueberries
- 1 cup fresh raspberries

We did use a 2 inch cutter for these and the biscuits are small. We figured each guest would eat 2 biscuits. Feel free to use a larger biscuit cutter, you'll just get fewer biscuits.

Step 1Preheat oven to 450 degrees F. Combine baking mix, 3 Tbsp confectioners' sugar, and 2/3 cup milk in a bowl. Mix well.

Step 2Knead dough 10 times and roll out to a 1/2 thickness.

Step 3Cut out dough with a 2 inch biscuit cutter or glass.

Step 4Arrange on greased baking sheet and brush tops with remaining 1 Tbsp milk.

Step 5Sprinkle with sugar.

Step 6Bake at 450 degrees for 8-10 minutes until golden.

Step 7For the filling, beat the whipping cream until soft peaks form. Add the cream cheese 1 Tbsp at a time while beating.

Step 8Blend in the remaining 1/4 cup confectioners' sugar and vanilla extract.

Step 9Mix all fruit together.

Step 10Cut the cooled biscuit in half.

Step 11Spoon 1 Tbsp of whipped cream onto the bottom half of each biscuit. Then spoon the berry mixture on top of the whipped cream.

Step 12Top with the other half of the biscuit.
