My daughter and I were baking the other day and I really wanted to perfect my pumpkin bar recipe so we both came up with ideas and this one was the winner! These bars went so fast I thought Superman came in and snatched them, lol These are so very easy, they're great for when you need a quick dessert.

Ingredients

  • 2 cups flour, sifted
  • 1-1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 sticks softened butter
  • 2 large eggs, i actually used jumbo, it was all i had
  • 1-1/2 cup pumpkin puree, not pumpkin pie mix
  • 1-1/4 cup packed light brown sugar
  • 1-1/2 teaspoon vanilla
  • 1 package chocolate chunks
  • 1 cup dark chocolate chips

How To Make the best, the easiest, 2-chocolate, pumpkin bars

  • Step 1
    Heat oven to 350 and lightly spray a 9" x 13" baking pan w/ cooking spray. In medium bowl combine flour, cinnamon, baking soda and salt. Set aside.
  • Step 2
    In large bowl, beat butter, brown sugar, pumpkin, vanilla and eggs until smooth. Gradually beat in flour mix just until combined. Don't over mix.
  • Step 3
    Fold in chocolate chunks. Stir in dark chocolate chips. Spread evenly in pan. Bake about 30 mins or until a toothpick inserted into center comes out mostly clean. I tested them at 25 mins and they were done but my daughters oven took 30 mins, so just keep an eye open! Cool and cut into whatever size bars you want. They are dense so I cut them rather small.
