If you like sweet potatoes you will like this. I didn't put a assemble time because it depends on if you use fresh sweet potatoes or canned sweet potatoes.

Ingredients

2 cups cooked,pureed sweet potatoes or 1 can(15 0z) sweet potatoe puree
1/4 cup firmly packed light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1 cup heavy cream
3 tablespoons powdered sugar
12 - gingersnap cookies,coarsely crushed

How To Make sweet potato fool

Step 1

Combine sweet potatoes,brown sugar,cinnamon,ginger in medium bowl,stirring until well blended.

Step 2

Beat cream in large bowl with electric mixer until thick.Gradually add powdered sugar,beat until stiff.
Step 3

To assemble: Layer 1/2 of gingersnaps in a 2 quart glass bowl. Spread with 1/2 of sweet potato puree' & 1/2 whipped cream. Layer remaining gingersnaps,sweet potato puree' & whipped cream. Chill 1 hour before serving.
