sweet potato bars
My wife sends me recipes she finds on YouTube. This was one. The lady in the video suggested a few ways you can change it up, so of course, I made some changes. Cut the ingredients in half for an 8" square pan.

Ingredients
- 5 pounds sweet potatoes
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1/2 can sweetened condensed milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon lemon extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 2-3 tablespoons all-purpose flour, if needed
- CRUST
- 2 cups all-purpose flour
- 1 cup butter, room temperature
- 1/2 cup brown sugar, firmly packed

Step 1Boil sweet potatoes until tender. Drain and set aside to cool. Preheat oven to 350 degrees F.

Step 2For the crust: In a medium bowl, mix the flour and brown sugar. Cut up the butter sticks into chunks to make it easier to work it into the flour mixture. You can use your hands or a pastry cutter to do this. Leave some small chunks of butter.

Step 3Cover the bottom of a 9"x13" baking dish with the mixture and press to make an even, flat crust. Bake for 15-20 minutes.

Step 4For the filling: Peel the sweet potatoes and place them in a large bowl or back into the pot. Add a stick of softened butter and mash until smooth. Add the sugar and stir. The original recipe used white sugar. I used half white and half dark brown.

Step 5Thoroughly mix in the rest of the ingredients except the flour. Your batter should be like cake batter. If it's runny, add the flour.

Step 6Pour the batter into the prebaked crust. Even it out and bake at 350 degrees F for 45-60 minutes.
