Swedish Pancakes

These were a huge hit when I made them for a family Sunday breakfast. They are just like crepes and are delicious served with Nutella or your favorite jam and some powdered sugar sprinkled on top!

  1. Blend together eggs and milk with rotary beater. Add flour, 1 tbsp sugar and salt; blend well. Add vanilla. Bake in lightly greased 8 inch skillet, using 1/4 cup batter for each. Tilt skillet back and forth quickly when batter is added to make a thin coating. Bake until top is dry, then turn and brown other side.
