Ingredients

  • 3
    envelopes unflavored gelatin
  • 3/4 c
    fresh lemon juice
  • 1-1/2 c
    boiling water
  • 3/4 c
    granulated sugar
  • 1-1/2 c
    ricotta cheese
  • 1 c
    seedless grapes, chopped
  • 2 c
    fresh strawberries, whole or sliced (as desired)

How to Make Summertime Surprise

Step-by-Step

  1. In medium-sized metal mixing bowl, let gelatin stand in lemon juice until softened.
  2. Pour water over; mix until gelatin is completely dissolved.
  3. Add sugar.
  4. Force cheese through sieve into bowl; stirring well.
  5. Chill in refrigerator until mixture starts to thicken.
  6. Remove from refrigerator; beat with mixer on lowest speed for 5 minutes.
  7. Fold in grapes.
  8. Spray a 1-quart ring mold (or several individual molds, if desired) with cooking spray.
  9. Pour mixture into mold or molds.
  10. Chill until firm, about 30 minutes.
  11. Garnish with whole strawberries, as desired.
