envelopes unflavored gelatin
3/4 c
fresh lemon juice
1-1/2 c
boiling water
3/4 c
granulated sugar
1-1/2 c
ricotta cheese
1 c
seedless grapes, chopped
2 c
fresh strawberries, whole or sliced (as desired)


1In medium-sized metal mixing bowl, let gelatin stand in lemon juice until softened.
2Pour water over; mix until gelatin is completely dissolved.
3Add sugar.
4Force cheese through sieve into bowl; stirring well.
5Chill in refrigerator until mixture starts to thicken.
6Remove from refrigerator; beat with mixer on lowest speed for 5 minutes.
7Fold in grapes.
8Spray a 1-quart ring mold (or several individual molds, if desired) with cooking spray.
9Pour mixture into mold or molds.
10Chill until firm, about 30 minutes.
11Garnish with whole strawberries, as desired.
