I love coconut, no really I do. Add orange and I call it a dream come true. These are so easy to make. If you like coconut pie I think you will love these.

Ingredients

  • 1/2 c
    butter, softened
  • 1 1/2 c
    sugar substitute
  • 2 tsp
    grated orange rind
  • 1/4 c
    fresh orange juice
  • 3 c
    unsweetened flaked coconut, divided
  • 1 1/2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt

How to Make Sugar Free Coconut Pie Bars

Step-by-Step

  1. Preheat oven to 350 F.
  2. Cream butter in a large mixer bowl, gradually add sugar, beat well.
  3. Add eggs, orange rind, juice and 2 cups coconut; stir well.
  4. In a small bowl combine flour, baking powder and salt, mix well and stir into creamed mixture.
  5. Lightly grease and flour a 13 X 9 X 2 inch baking pan. Spread batter into pan. Batter will be very thick. I find it easier to spread with dampened fingers.
  6. Mix a tablespoon of sweetener with the remaining cup of coconut. Sprinkle over top of batter.
  7. Bake at 350 for 20 - 25 minutes or until lightly browned. Cool completely in pan; cut into squares.
