sugar free coconut pie bars

I love coconut, no really I do. Add orange and I call it a dream come true. These are so easy to make. If you like coconut pie I think you will love these.

yield 2 dozen 2 inch squares, or whatever size your heart desires.

Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar substitute
  • 2 teaspoons grated orange rind
  • 1/4 cup fresh orange juice
  • 3 cups unsweetened flaked coconut, divided
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

How To Make sugar free coconut pie bars

  • Step 1
    Preheat oven to 350 F.
  • Step 2
    Cream butter in a large mixer bowl, gradually add sugar, beat well.
  • Step 3
    Add eggs, orange rind, juice and 2 cups coconut; stir well.
  • Step 4
    In a small bowl combine flour, baking powder and salt, mix well and stir into creamed mixture.
  • Step 5
    Lightly grease and flour a 13 X 9 X 2 inch baking pan. Spread batter into pan. Batter will be very thick. I find it easier to spread with dampened fingers.
  • Step 6
    Mix a tablespoon of sweetener with the remaining cup of coconut. Sprinkle over top of batter.
  • Step 7
    Bake at 350 for 20 - 25 minutes or until lightly browned. Cool completely in pan; cut into squares.
