Ingredients

  • 1 pound rhubarb, fresh, cleaned, cut into 1/2" thick slices
  • 1/2 cup sugar
  • 1 cup water
  • 1 - 3 oz. packages strawberry, jell-o
  • - whipped cream, sweetened or cool whip
  • - strawberries, fresh, whole (dipped in sugar) or fanned (for garnish)

How To Make strawberry-rhubarb cup dessert

  • Step 1
    Toss rhubarb with sugar in a large saucepan; stir in water.
  • Step 2
    Bring to a boil on medium heat, stirring constantly; cook 2 minutes. Remove from heat. Add dry jell-o mix; stir 2 minutes until completely dissolved. Pour into dessert cups.
  • Step 3
    Refrigerate 3 hours or until firm.
  • Step 4
    When ready to serve, dallop of whipped cream & a strawberry either dipped in sugar or fanned out on top.
