This was a recipe given to my family by an old family friend. I've seen these bars available commercially, but IMO, it does not compare with the homemade bars!

Ingredients

  • FOR THE BARS:

  • 1 c
    sugar
  • 1 c
    corn syrup
  • 1 c
    smooth peanut butter
  • 6 c
    plain special k cereal
  • FOR THE TOPPING:

  • 16 oz
    semi-sweet chocolate chips
  • 16 oz
    butterscotch chips

How to Make Special K Bars

Step-by-Step

  1. Grease a 9x13-inch cake pan with cooking spray.
  2. Combine sugar and corn syrup in a 5-quart saucepan. Cook over medium heat until sugar crystals are completely dissolved.
  3. Remove from heat and add the peanut butter. Combine together.
  4. Slowly add the Special K cereal and stir until thouroughly combined. Then press into the cake pan.
  5. Melt the butterscotch and chocolate chips together in a double-boiler. Spread over the top of the warm Special K mixture.
  6. Chill for about an hour, and then set out again to come to room temperature before cutting into 2-inch squares.
