Ingredients
- 1 1/2 cups flour
- 2/3 cup packed brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter softened
- 1 teaspoon vanilla extract
- 2 - large egg yolks
- 3 cups mini marshmallows
- TOPPING
- 2/3 cup light corn syrup
- 1/4 cup butter
- 2 teaspoons vanilla extract
- 12 ounces peanutbutter chips
- 2 cups rice krispies
- 3 cups coarsley chopped salted peanuts
How To Make salted peanut cookie chews

Step 1Preheat your oven to 350 degrees Combine crust ingredients, except marshmallows. Mix with your hands until a nice crumb mixture forms. Press in an ungreased 9 x 13" pan. Bake for 12 to 15 minutes till light brown. Sprinkly marshmallows on crust and put back in the oven for an additional 2 minutes. Just want the marshmallows to begin to puff. Cool while making the topping.

Step 2In a large non stick pan, heat the light syrup, butter, vanilla and chips till smooth. Turn off heat and add the rice krispies and nuts. Mix so the coating in incorporated well.

Step 3Immediately spoon over marshmallows and spread evenly. Chill in the fridge for 2 hrs. Cut in small squares and enjoy.
