Russell James is a gourmet raw chef and makes the most spectacular raw meals I've ever seen. This is one of his creations. It is so easy to make in your blender. Make sure your dates are soft. If they aren't soak them for a while in some warm water or orange juice until they are and make sure you remove the pit. This recipe can take the place of agave syrup. This would be high on the glycemic index (103) so it wouldn't be a good sugar substitute if you're diabetic.

Ingredients

  • 1 1/2 cups filtered water
  • 1 cup soft pitted majool dates
  • 1 pinch sea salt
  • 11/4 teaspoons lemon juice

How To Make russell james’s raw date sweetener

  • Step 1
    Process the 4 ingredients in your blender. Put in a mason jar and store in the fridge. You can use this in place of agave syrup or other liquid sweeteners. If you do use it in place of agave you might need to double up because this is no where as sweet as the agave is.

    It should keep up to 2 weeks in the fridge.
