Ingredients

  • 1 cup flour
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup shortening
  • - topping:
  • 1 1/4 cups sugar
  • 3 - egg yolks, beaten thick
  • 2 1/4 cups chopped rhubarb
  • 1/3 cup cream
  • 2 tablespoons flour
  • - meringe:
  • 3 - egg whites
  • 1/2 cup sugar

How To Make rhubarb delight

  • Step 1
    Combine flour, sugar, salt and shortening to a crumbly mixture and press in a 9x9 or small cake pan. Bake in oven @ 350 for 20-25 minutes or until light brown. Cool.
  • Step 2
    Make topping by combining all ingredients. Cook in a saucepan, stirring until thickened. Cool and pour into baked crust.
  • Step 3
    Make meringue by beating egg whites stiff and then gradually adding sugar, beating constantly. Pile lights over top of dessert, return to oven to brown.
