Ingredients
- 1 cup flour
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 1/2 cup shortening
- - topping:
- 1 1/4 cups sugar
- 3 - egg yolks, beaten thick
- 2 1/4 cups chopped rhubarb
- 1/3 cup cream
- 2 tablespoons flour
- - meringe:
- 3 - egg whites
- 1/2 cup sugar
How To Make rhubarb delight

Step 1Combine flour, sugar, salt and shortening to a crumbly mixture and press in a 9x9 or small cake pan. Bake in oven @ 350 for 20-25 minutes or until light brown. Cool.

Step 2Make topping by combining all ingredients. Cook in a saucepan, stirring until thickened. Cool and pour into baked crust.

Step 3Make meringue by beating egg whites stiff and then gradually adding sugar, beating constantly. Pile lights over top of dessert, return to oven to brown.
