Ingredients
- CRUST
- 1 cup flour
- 3/4 cup quick oatmeal
- 1 cup light brown sugar, packed
- 1/2 cup butter, melted
- 1 teaspoon cinnamon
- FILLING
- 1 cup sugar
- 2 tablespoons corn startch
- 1 cup water
- 1 teaspoon vanilla
- 1-2 cup rhubarb, diced
How To Make rhubarb crunch

Step 1Mix crust ingrediants until Crumbly. Then press 1/2 the crumbs into a 9 inch pie pan. Cover with thick layer of rhunbarb.

Step 2In a sauce pan, mix filling ingredients. Cook until thick and clear. Pour over rhubarb. Top with the other 1/2 of the crust crumbs.

Step 3Bake at 350 for 1 hour. While still hot top with vanilla ice cream and serve.
