This is a great casserole for rhubarb lovers and even for those that think they don't like rhubarb. It can be used as a side dish or even as a dessert with ice cream over it. I have also included a variation that I have often made as well.

Ingredients

  • 3 cups chopped rhubarb
  • 6 slices slices of bread, cubed
  • 1 stick margarine, melted
  • 1 cup sugar

How To Make rhubarb casserole

  • Step 1
    Mix all ingredients and put in a 9 x 13 pan. Bake at 350 for 1/2 hour to 45 mins.
  • Step 2
    Variation: Add 2 eggs and 1 cup of milk, 1 tsp vanilla and a dash of cinnamon, for a bread pudding type of texture to use as a dessert.
