Ingredients
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup butter
- 2 tablespoons brandy (may substitute milk if you don't use alcohol in cooking)
- 1 egg yolk
- 3/4 cup raspberry jam
- 2 eggs, beaten
- 1 1/2 cups sugar
- 1/4 cup butter, melted
- 2 tablespoons butter, melted
- 2 teaspoons vanilla extract
- 2 1/2 cups flaked coconut
How To Make raspberry brandy delights

Step 1Combine the first 4 ingredients in a mixing bowl; cut in 1/2 cup butter with a pastry cutter until the mixture resembles coarse meal. Sprinkle the brandy over the flour mixture.

Step 2Add the egg yolk and stir with a fork until the dry ingredients are moistened.

Step 3Press the mixture into a lightly greased 11 x 7 x 1 1/2 inch baking dish. Spread the jam over the crumb mixture.

Step 4Combine the eggs, 1 1/2 cups sugar, 1/4 cup plus 2 tablespoons butter, and vanilla in a mixing bowl. Beat at medium speed until well blended.

Step 5Stir in the flaked coconut and pour the mixture over the jam.

Step 6Bake at 350 degrees F for 35 minutes.

Step 7Let cool completely on a wire rack. Cover and chill. Cut into squares.
