Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup butter
  • 2 tablespoons brandy (may substitute milk if you don't use alcohol in cooking)
  • 1 egg yolk
  • 3/4 cup raspberry jam
  • 2 eggs, beaten
  • 1 1/2 cups sugar
  • 1/4 cup butter, melted
  • 2 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 2 1/2 cups flaked coconut

How To Make raspberry brandy delights

  • Step 1
    Combine the first 4 ingredients in a mixing bowl; cut in 1/2 cup butter with a pastry cutter until the mixture resembles coarse meal. Sprinkle the brandy over the flour mixture.
  • Step 2
    Add the egg yolk and stir with a fork until the dry ingredients are moistened.
  • Step 3
    Press the mixture into a lightly greased 11 x 7 x 1 1/2 inch baking dish. Spread the jam over the crumb mixture.
  • Step 4
    Combine the eggs, 1 1/2 cups sugar, 1/4 cup plus 2 tablespoons butter, and vanilla in a mixing bowl. Beat at medium speed until well blended.
  • Step 5
    Stir in the flaked coconut and pour the mixture over the jam.
  • Step 6
    Bake at 350 degrees F for 35 minutes.
  • Step 7
    Let cool completely on a wire rack. Cover and chill. Cut into squares.
