quick and easy pineapple jam bars

My husband had a sweet tooth one night and was begging me to make him something sweet. All I had in my Pantry was a Yellow Cake Mix and jar of Pineapple Jam. These bars are the result of that request and we have made them several times since with a few variations. I have added some peanut butter in place of some of the butter to the cake mix and used a strawberry jam instead for delicious PB & J bars. Exchanging Lemon Cake Mix and Raspberry Jam for the main ingredients is another fine variation. I hope you enjoy this easy recipe.

Ingredients

  • 1 box yellow cake mix
  • 1 stick butter, softened
  • 1 - egg
  • 1 (10 oz) jar pineapple jam (or whatever flavor you like)

How To Make quick and easy pineapple jam bars

  • Step 1
    Preheat oven to 350.
  • Step 2
    Combine the Cake Mix, Butter and Egg in a bowl until it is combined and forms a "dough". I usually mix mine by hand.
  • Step 3
    Press 3/4 of the "dough" into an 8X8 cake pan.
  • Step 4
    Spread the Jam on top.
  • Step 5
    Place small pieces of the remaining "dough" on top of the jam until it is all used up.
  • Step 6
    Bake in the preheated 350 degree oven for approximately 20-25 minutes or until golden brown. Allow to cool before cutting into squares.
