Quick and Easy Pineapple Jam Bars

Jody Ayers

My husband had a sweet tooth one night and was begging me to make him something sweet. All I had in my Pantry was a Yellow Cake Mix and jar of Pineapple Jam. These bars are the result of that request and we have made them several times since with a few variations. I have added some peanut butter in place of some of the butter to the cake mix and used a strawberry jam instead for delicious PB & J bars. Exchanging Lemon Cake Mix and Raspberry Jam for the main ingredients is another fine variation. I hope you enjoy this easy recipe.

1 box
yellow cake mix
1 stick
butter, softened
1 (10 oz) jar(s)
pineapple jam (or whatever flavor you like)

1Preheat oven to 350.
2Combine the Cake Mix, Butter and Egg in a bowl until it is combined and forms a "dough". I usually mix mine by hand.
3Press 3/4 of the "dough" into an 8X8 cake pan.
4Spread the Jam on top.
5Place small pieces of the remaining "dough" on top of the jam until it is all used up.
6Bake in the preheated 350 degree oven for approximately 20-25 minutes or until golden brown. Allow to cool before cutting into squares.
