pumpkin raisin bars

These bars smell so good when baking because of the spices. This was a cake and I changed it over to make bars because I was looking for finger foods for a party. My Mom always made this cake around the Christmas Holidays because she said it made the house smell good.

yield 48 bars or a 13" x 9" cake (note longer baking for cake - 40 to 50 minutes

Ingredients

  • 2 cups flour
  • 2 cups sugar or sugar substitute
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon cloves
  • 1 cup oil (i use corn oil)
  • 4 - eggs
  • 1 can 15 oz can - (2) cups pumpkin
  • 1/2 cup chopped nuts (nuts can be left out if anyone has an allergy)
  • 1/2 cup raisins
  • FROSTING
  • 1/3 cup margarine or butter, softened
  • 1 - 3 oz pkg. of cream cheese, softened
  • 2 cups powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla

How To Make pumpkin raisin bars

  • Step 1
    Heat over to 350 degrees.
  • Step 2
    Grease 15" x 10" x 1" baking pan.
  • Step 3
    In a large bowl combine all bar ingredients except nuts and raisins.
  • Step 4
    Beat on low speed until moistened.
  • Step 5
    Beat 2 minutes at medium speed.
  • Step 6
    Stir in nuts and raisins.
  • Step 7
    Pour into greased pan.
  • Step 8
    Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean. COOL COMPLETELY.
  • Step 9
    In a smaller bowl, combine all frosting ingredients and beat until smooth.
  • Step 10
    Frost cooled bars and store in refrigerator. Makes 48 bars.
  • Step 11
    If you would like, you can make a 13" x 9" Pumpkin Raisin Cake. Bake for 40 to 50 minutes.
