These bars smell so good when baking because of the spices. This was a cake and I changed it over to make bars because I was looking for finger foods for a party. My Mom always made this cake around the Christmas Holidays because she said it made the house smell good.

Ingredients

  • 2 c
    flour
  • 2 c
    sugar or sugar substitute
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1/2 tsp
    salt
  • 1/2 tsp
    cloves
  • 1 c
    oil (i use corn oil)
  • 4
    eggs
  • 1 can(s)
    15 oz can - (2) cups pumpkin
  • 1/2 c
    chopped nuts (nuts can be left out if anyone has an allergy)
  • 1/2 c
    raisins
  • FROSTING

  • 1/3 c
    margarine or butter, softened
  • 1
    3 oz pkg. of cream cheese, softened
  • 2 c
    powdered sugar
  • 1 Tbsp
    milk
  • 1 tsp
    vanilla

How to Make PUMPKIN RAISIN BARS

Step-by-Step

  1. Heat over to 350 degrees.
  2. Grease 15" x 10" x 1" baking pan.
  3. In a large bowl combine all bar ingredients except nuts and raisins.
  4. Beat on low speed until moistened.
  5. Beat 2 minutes at medium speed.
  6. Stir in nuts and raisins.
  7. Pour into greased pan.
  8. Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean. COOL COMPLETELY.
  9. In a smaller bowl, combine all frosting ingredients and beat until smooth.
  10. Frost cooled bars and store in refrigerator. Makes 48 bars.
  11. If you would like, you can make a 13" x 9" Pumpkin Raisin Cake. Bake for 40 to 50 minutes.
