pumpkin raisin bars
These bars smell so good when baking because of the spices. This was a cake and I changed it over to make bars because I was looking for finger foods for a party. My Mom always made this cake around the Christmas Holidays because she said it made the house smell good.

48 bars or a 13" x 9" cake (note longer baking for cake - 40 to 50 minutes
Ingredients
- 2 cups flour
- 2 cups sugar or sugar substitute
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon cloves
- 1 cup oil (i use corn oil)
- 4 - eggs
- 1 can 15 oz can - (2) cups pumpkin
- 1/2 cup chopped nuts (nuts can be left out if anyone has an allergy)
- 1/2 cup raisins
- FROSTING
- 1/3 cup margarine or butter, softened
- 1 - 3 oz pkg. of cream cheese, softened
- 2 cups powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla
How To Make pumpkin raisin bars

Step 1Heat over to 350 degrees.

Step 2Grease 15" x 10" x 1" baking pan.

Step 3In a large bowl combine all bar ingredients except nuts and raisins.

Step 4Beat on low speed until moistened.

Step 5Beat 2 minutes at medium speed.

Step 6Stir in nuts and raisins.

Step 7Pour into greased pan.

Step 8Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean. COOL COMPLETELY.

Step 9In a smaller bowl, combine all frosting ingredients and beat until smooth.

Step 10Frost cooled bars and store in refrigerator. Makes 48 bars.

Step 11If you would like, you can make a 13" x 9" Pumpkin Raisin Cake. Bake for 40 to 50 minutes.
