My Mom made this for Thanksgiving often. She used pecans for the topping. It is also good with a spice cake mix and you can use cinnamon or pumpkin pie mix. Yummy!

Ingredients For pumpkin pudding cake

  • 4
    eggs
  • 3 c
    canned pumpkin
  • 1 1/2 c
    sugar
  • 1 tsp
    salt
  • 2 Tbsp
    cinnamon
  • 1 can
    evaporated milk
  • 1/4 c
    milk
  • 1 box
    yellow cake mix
  • 1 c
    butter melted
  • 1 c
    chopped nuts

How To Make pumpkin pudding cake

  • 1
    Mix eggs, pumpkin, sugar, salt, cinnamon, evaporated milk, and milk in order given. Pour into 9x13 pan.

    Sprinkle 1 yellow cake mix over filling. Pour 1 C.melted butter evenly over cake mix. Sprinkle with 1 C. chopped nuts.

    Bake at 325 degrees-1 hour. Serve warm with ice cream or also good cold.
