I made my own potato chips for the first time today and had the oil already heated. I'd been wondering what I was going to do with the extra pie pumpkin I bought last week so I thought, why not make chips, pumpkin pie chips? Voila!

Ingredients

  • 1 - small pie pumpkin, gutted and shaved
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

How To Make pumpkin pie chips

  • Step 1
    Cut your pumpkin in half, clean out each half, use a potato peeler to peel off the rind, then cut each half into thirds. Use a mandoline slicer to make chips.
  • Step 2
    Heat olive oil or deep fryer and fry your pumpkin chips in batches. Outside edges should be golden brown. Remove chips and place on wax paper lined cookie sheet to drain.
  • Step 3
    Combine sugar, cinnamon, and nutmeg in a bowl. Sprinkle over chips, toss lightly to combine, and then transfer to a plate. * I like to use a paper plate with a paper towel.
