I try to make these at least once a year. Especially around the holidays. They go pretty fast.

Ingredients

  • 1 1/3 cups all-purpose flour
  • 1/2 cup brown sugar, firmly packed
  • 3/4 cup granulated sugar, divided
  • 3/4 cup cold butter
  • 1 cup old fashioned or quick cooking oats, uncooked
  • 1/2 clove pecans, chopped
  • 8 ounces pkg cream cheese, softened
  • 3 - eggs
  • 15 ounces can pumpkin
  • 1 tablespoon pumpkin spice

How To Make pumpkin pie bars

  • Step 1
    Mix flour, brown sugar, and 1/4 granulated sugar in a mixing bowl. Cut in butter with a pastry blender until mixture is crumbly. Stir in oatmeal and pecans. Reserve 1 cup of the mixture and set aside. Press the remaining mixture into a 13x9 baking dish that has been lined with foil that has been greased. Preheat the oven to 350 degrees. Bake for 15 minutes.
  • Step 2
    Beat cream cheese, remaining granulated sugar, eggs, pumpkin, and pumpkin pie spice in a separate bowl on medium speed until well blended. Pour mixture over baked crust. Sprinkle with reserved crumb mixture.
  • Step 3
    Bake for 25 minutes. Let cool completely. Lift foil from dish and cut into 24 squares.
