Ingredients
- 4 - eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups all-purpose flour
- 1 tablespoon baking soda
- 1 1/2 cups canned pumpkin
- CREAM CHEESE FROSTING
- 8 ounces package cream cheese, softened
- 3 tablespoons butter or margarine, softened
- 2 1/2 cups sifted powdered sugar
- 2 teaspoons vanilla extract
How To Make pumpkin cupcakes

Step 1Beat eggs in a large mixing bowl; add all ingredients except frosting, and mix well with an electric mixer. Spoon batter into paper-lined muffin pans, filling 3/4 full. Bake at 350 for 25 to 30 minutes. Let cool; frost with Cream Cheese Frosting.

Step 2FROSTING: Combine cream cheese and butter; beat until light and fluffy. Add remaining ingredients; beat until smooth.
