Ingredients

  • 4
    eggs
  • 1 c
    vegetable oil
  • 2 c
    sugar
  • 2 c
    all-purpose flour
  • 1 Tbsp
    baking soda
  • 1 1/2 c
    canned pumpkin
  • CREAM CHEESE FROSTING

  • 8 oz
    package cream cheese, softened
  • 3 Tbsp
    butter or margarine, softened
  • 2 1/2 c
    sifted powdered sugar
  • 2 tsp
    vanilla extract

How to Make Pumpkin Cupcakes

Step-by-Step

  1. Beat eggs in a large mixing bowl; add all ingredients except frosting, and mix well with an electric mixer. Spoon batter into paper-lined muffin pans, filling 3/4 full. Bake at 350 for 25 to 30 minutes. Let cool; frost with Cream Cheese Frosting.
  2. FROSTING: Combine cream cheese and butter; beat until light and fluffy. Add remaining ingredients; beat until smooth.
