I got this recipe from a family friend. I got to sample it in March 2011 & loved it. I made it for the first time in April 2011 & it turned out yummy & easy to prepare. If you like pumpkin this is a must to try.

Ingredients

  • 1 box yellow cake mix (reserve 3/4-1 c.)
  • 1/3 cup margarine, melted
  • 1 - egg, slightly beaten
  • FILLING
  • 1 lg can pumpkin
  • 3 - eggs
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2/3 cup evaporated milk
  • 1/1/2 teaspoon cinnamon
  • - nutmeg & pumpkin pie spice (optional)

How To Make pumpkin cake

  • Step 1
    Combine first three ingredients. Press into 9"x13" pan (greased & floured).
  • Step 2
    Mix together pumpkin, eggs, salt, brown sugar, white sugar, evaporated milk & cinnamon (spices). Pour pumpkin mixture over cake (crust) mixture.
  • Step 3
    To reserve dry mixture, add 1/2 c. sugar (brown preferrably), 1/2 stick margarine (less can be used). Mix till crumbly. Sprinkle over cake. Bake at 350 degrees, 55 minutes or till knife comes out clean.
