I got this recipe from a family friend. I got to sample it in March 2011 & loved it. I made it for the first time in April 2011 & it turned out yummy & easy to prepare. If you like pumpkin this is a must to try.

Ingredients

  • 1 box
    yellow cake mix (reserve 3/4-1 c.)
  • 1/3 c
    margarine, melted
  • 1
    egg, slightly beaten
  • FILLING

  • 1 lg can(s)
    pumpkin
  • 3
    eggs
  • 1/2 tsp
    salt
  • 1/2 c
    brown sugar
  • 1/4 c
    white sugar
  • 2/3 c
    evaporated milk
  • 1/1/2 tsp
    cinnamon
  • ·
    nutmeg & pumpkin pie spice (optional)

How to Make Pumpkin Cake

Step-by-Step

  1. Combine first three ingredients. Press into 9"x13" pan (greased & floured).
  2. Mix together pumpkin, eggs, salt, brown sugar, white sugar, evaporated milk & cinnamon (spices). Pour pumpkin mixture over cake (crust) mixture.
  3. To reserve dry mixture, add 1/2 c. sugar (brown preferrably), 1/2 stick margarine (less can be used). Mix till crumbly. Sprinkle over cake. Bake at 350 degrees, 55 minutes or till knife comes out clean.
